Ringtons Recipe: Earl Grey Scones

Afternoon tea wouldn't be complete without scones.

You can enjoy as a savoury treat by adding cheese and lashing of salted butter, or as a sweet treat by adding dried fruit and topping with sweet jam and fresh cream.

So weather you're making these as part of a bigger afternoon tea celebrating with friends and family, or simply to keep in the freezer ready for when you have visitors, these Earl Grey scones are fragrant, and simply delicious.

Ingredients

4 Ringtons Earl Grey tea bags

150ml Milk

400g Plain flour

20g Baking powder

75g Cold butter

100g Caster sugar

2 eggs, plus extra for egg wash

Method

1. Preheat oven to 220°F / 200°C / gas mark 7. 

2. Bring the milk to a boil and add the tea bags. Remove from the heat and allow to infuse for 5 minutes before removing the tea bags.

3. Rub the flour and butter together with fingertips until it resembles fine breadcrumbs, stir through the sugar and baking powder.

4. Whisk eggs with the cooled milk, and slowly add it to the dry mixture. Combine until it forms a soft sticky dough.

5. Lightly flour your worksurface and turnout the dough, roll to a 3cm thickness.

6. Cut our scones using a scone cutter.

7. Place on a lined baking tray and leave at room temperature for 30-45 minutes.

8. Add an egg wash glaze to the opt of each scone before placing in to the oven.

9. Bake for 15 minutes, or until golden brown.
